This article will provide you with two delicious meatless side dish recipes that you can easily prepare at home with only a few ingredients.
Know the Recipes
- Stuffed Potato
Ingredients: Medium-sized potatoes (3 to 4), Cooked and mushed tofu (1 cup, you can also use pea protein mix), Finely chopped onion (1), Chopped Green Chillies (2-3), Ginger-garlic paste (1 teaspoon), Cumin seeds (1 teaspoon), Cumin powder, Turmeric powder, Coriander powder and salt to taste, Vegetable oil.
Preparation: First, boil the potatoes after thoroughly washing, Make sure they are not overcooked or mushy. Then set them aside to cool. For stuffing mixture mix the mashed tofu or pea protein mixture, chopped chillies and onions, ginger-garlic paste, cumin-turmeric-coriander powder, and salt in a large mixing bowl. Mix all the ingredients and spices in a uniform way. Now take the potatoes and slice them in half. Scoop out the centre of each of the potatoes to create space for stuffing. Stuff the mixture into the space gently and fill it to the brim. Now take a frying pan and heat a little bit of vegetable oil. Add the cumin seeds and stir a little. Now add the potato slices to the hot oil, making sure to keep the stuffed part facing up. Cook until the colour is golden and then carefully flip them to other sides. Once both sides are golden and crispy take them off from the pan and serve hot with rice.
- Roasted Brussels Sprouts
Ingredients: Brussels sprouts (around 500 gm), Olive oil (3-4 tablespoons), Minced garlic (4-5 cloves), Lemon juice (2 teaspoons), Pepper powder ( ½ teaspoon) and Salt to taste.
Preparation: First trim the Brussels sprouts and cut them into halves. Heat the oven to 200 degrees Celsius and prepare a baking sheet with aluminium foil. Take a mixing bowl and mix the halved Brussels sprouts, salt, pepper, olive oil, lemon juice and minced garlic. Now spread the well-mixed Brussels sprouts on the baking sheets. Make sure to spread in a single layer to roast evenly. Now put the baking sheet into the oven and roast them for 25 minutes. Once the Brussels sports are crispy and caramelised, remove them from the oven and put them on a serving plate. Serve hot with your favourite main course.
